why do they call him "Pastor" Jim if he's a catholic priest (or is he? is he something else? I don't know that anyone else wears the clerical collar like that except catholics)

Oh not only Catholic priest wear the sign of the cloth. There are pastors of other denominations and some nondenominational religions that the preacher/pastor wears the white collar as a sigh of their faith/teaching.
